Summer Deals

A little summer. Last night I was an extra on a pilot shoot for a small indie movie. The St. John's Bridge is one of the coolest bridges I've ever seen. There is a park below it, and there are stunning views of this structure.

The Dog Days Are Over. What is summer but the beauty we speak of all the time? It is a Popsicle melting in your hand.

I made Mama dinner tonight. It was awesome. Try out these recipes some time.

Zucchini pancakes:
2 cups flour
1 tbsp baking powder
3 eggs
½ shredded onion
2 shredded zucchinis

add all the ingredients together and turn it into a batter. Put in a pan with liberal amounts of olive oil and make 'pancakes'. They cook fast so keep an eye on them.

In the meantime, take some small round tomatoes and cut out the core. Basically turn them into a shell of sorts. Take fresh mozzarella balls in water and put them in the cored tomatoes. Turn the oven to broil and put the tomatoes in for about 5 minutes. Just enough to make the cheese melt a little. Add fresh basil leaves to the top when you remove them.

Prep a box of couscous. Read the box, it's really easy. Get a flavored one, it makes the whole process easier. Use a little more water than recommended.

Get a cup of sour cream. Add a little honey and celery salt. Pour in a dash of milk and stir. It should be fairly liquid. Looser than honey, firmer than milk. Somewhere in between.

Serve all these on a plate with the couscous, then the pancakes on top, a dollop of the sauce, and finally the tomato on the side. This took me less than 30 minutes to make. Don't be afraid to spice these things up. They are all pretty mild because Mama doesn't like spicy foods.

Btw, there will be a ton of zucchini pancakes this way, but the good news is that they can be used for just about any meal with just about anything.

The point I'm trying to make is that I have been so happy and even though tragedy is inevitable—the only sure thing in the world—I am enjoying my time in the sun. Spend time with those you love and make yourself better for it. It's possible.
